In the heart of the Old Town, Cabaret Voltaire is a legendary live music venue in the vaults beneath North Bridge. Richard went exploring and found today's Edinburgh Barstar, Dale Welstead, a child star of kayaking who turned his sporting talents to swimming. He can also knock up an excellent Edinburgh Iced Tea.

Background: Born in Isla, Inner Hebrides. Moved to Edinburgh for nursery school then Sanday, Orkney for five years before the family moved to Perth, Australia, where he was the champion in marathon kayaking for children aged 12 and under. He lived there for four years before the family moved to Dumfries for two years. He completed his secondary education in Edinburgh then went to Edinburgh College to study Business for a year. He was a competitive swimmer at national level, coming third in Scotland in his category for the 100m freestyle at the age of seventeen. He quit the following year and now coaches and does bar work.
Ambition: To coach a swimmer to the Olympics
