It specialises in the use of seasonal Scottish produce with weekly-changing menu. It features here because only last week it was licensed to sell alcohol, which should make the locals even happier.

Background: Born and educated in Ipswich he did a variety of chef work before moving to Sydney in 2013. He studied business management there through Le Cordon Bleu. He returned to the U.K. in 2018 and settled in Edinburgh, because his partner is from Dundee where he’d previously studied Sports Science, but that didn’t work out. He worked in the Lookout on Carlton Hill before coming to work with Jess in the kitchen, but it’s a small place so he’s often seen around the place. As the relatively new venue developed he started doing supper parties then full dinners as the chef.

Ambition: To have his own restaurant somewhere in the countryside around Dundee.

Favourite Drink: Orange wine, biodynamic, organic and funky.
