Barstar Of The Day: Olly works above the Traverse but plans to open bars around the world.

While enjoying dinner in the luxury of this restaurant above the Traverse Theatre, Richard couldn’t resist finding someone to add to the barstars’ list. Who better than the man serving him several cocktails in the intimate bar? The setting is described as an ‘opulent interior of polished timbers, sleek copper trimmed lighting, sumptuous wall coverings, tactile fabrics in earthy colours and striking circular atrium with life size apple tree’. In addition to an a la carte menu there are excellent Market and Lunch Menus.

Background: Born in Kingston-upon-Thames. He went to school across the river in Hampton before transferring to boarding school at Brighton College. He attended the University of Edinburgh from 2015 where he reads International Relations. He graduates next year and did lots of events work before taking up his present post as bartender nine months ago. Europe and the Middle East are places he has traveled around.

Ambition: To open bars around the world.
