Barstar Of The Day: Nikki wants to create a drink you will remember

After two years of doing Barstar of the Day and visiting over fifty venues, it’s inevitable that Richard will now begin to revisit several of them. However, this feature is a tribute to people rather than places and staff change so there are always new people to meet.

Name: Nikki Naks

Age: 27

Bar: Dragonfly, 52 West Port, Edinburgh, EH1 2LD.

Background: Born in Alloa but has lived in Edinburgh since she was two. Going to school played second fiddle to her love of drama. When she was eighteen she secured her first bar job and that type of work became theatre in itself. She moved around the nightclub circuit and finished up at Under the Stairs on Merchant Street, She returned there several years later as manager after working at Panda & Sons, where she fell in love with cocktails, and also at The Last Word. Recently she moved to Dragonfly as general manager; a pub she knew well as a customer and where she had seen some very fine staff learn their art.

Ambition: To continue learning and in particular working on the art of creating environments, occasions and drinks that people will remember.

Favourite Drink: Talisker 10 (Nikki’s tasty) & a half of Guinness
