Barstar Of The Day: Debs wants to keep goats in the Alps and likes her Martinis positively filthy!

Richard finds himself in what can only be described as a truly hidden gem. If you didn’t know it was there you probably wouldn’t find it. Once you’ve descended the narrow, rather precipitous steps, a homely sitting room awaits that extends in both width and length beyond anything that might have been imagined before entering.

Name: Debs Young

Age: 38

Bar: Under the Stairs, 3A Merchant St., Edinburgh EH1 2QD

Background: Born in Edinburgh where she went to school, after which she planned to take a year out in Canada. Two weeks before flying out she decided to apply to Uni and the year abroad became a two week holiday. She studied at both Edinburgh and Edinburgh Napier Universities. She took a customised degree in publishing media and law, neither of which she graduated in having decided to drop out after three years. She subsequently worked in a number of bars, but it was at Oxygen Bar where she met her business partner, Gavin. After a great time there, where her passion for the industry was kindled and she acquired so many skills, she moved around learning how and how not to run a bar. Together they decided to take on a place of their own, and acquired one almost by accident. The sale of Under the Stairs has just fallen through and they put in an offer, thwarting another attempt to leave for Canada. The deal was done in twenty fours hours - eleven years ago!!

Ambition: To run a chalet with a bar in the Alps, keep goats, make cheese and drink wine.

Favourite Drink: Extra Dirty Martini (Actually make that filthy!)

Since you’re here…

… we have a small favour to ask. We don't want your money to support a hack's bar bill at Abattoir, but if you have a pound or two spare, we really encourage you to support a good cause. If this article has either helped you discover a gem or avoid a turkey, consider doing some good that will really make a difference.

You can donate to the charity of your choice, but if you're looking for inspiration, there are three charities we really like.

Mama Biashara
Kate Copstick’s charity, Mama Biashara, works with the poorest and most marginalised people in Kenya. They give grants to set up small, sustainable businesses that bring financial independence and security. That five quid you spend on a large glass of House White? They can save someone’s life with that. And the money for a pair of Air Jordans? Will take four women and their fifteen children away from a man who is raping them and into a new life with a moneymaking business for Mum and happiness for the kids.

Theatre MAD
The Make A Difference Trust fights HIV & AIDS one stage at a time. Their UK and International grant-making strategy is based on five criteria that raise awareness, educate, and provide care and support for the most vulnerable in society. A host of fundraising events, including Bucket Collections, Late Night Cabarets, West End Eurovision, West End Bares and A West End Christmas continue to raise funds for projects both in the UK and Sub-Saharan Africa.
