Barstar Of The Day: Amy wants to run the biggest events in the world while drinking a Penicillin.

A regal reception awaits Richard today in what was formerly Mather’s, but to distinguish it from its west end sister pub the name was changed. In the redesign a large picture of Maud Wagner from an old photo was installed. She would have loved the Festival Fringe. Born in Kansas in 1877 she was an aerialist and contortionist. She was also the first known female tattoo artist in the USA; a skill she learned from her husband. She continued to create hand-poked tattoos long after the machine was invented. It’s a fascinating story. Check her out and enjoy a selection of craft beers, fine spirits and gourmet pub grub with vegetarian and vegan choices.

Name: Amy Hanssen

Age: 22

Bar: The Empress of Broughton St. 25 Broughton St., Edinburgh EH1 3JU

Background: Born in Stavanger, Norway, to an Irish/Italian mother who grew up in Scotland and a Norwegian father. She went to school in Glasgow but returned to Stavanger aged 17 to take the IB. She spent a term at university there, but didn’t like it so went back to Glasgow where she worked in bars before going to study at the European Bartenders School in Amsterdam; a course she completed. She returned to Scotland to take up International Festival and Events Management and Marketing at Edinburgh Napier University; a joint honours course she is still studying, but which allows for a great social life as partying at events and festivals counts as research! She’s been at her current pub for around eighteen months.

Ambition: To run the biggest events in the world

Favourite Drink: A Penicillin (smoky whisky, lemon, ginger and sugar)

Since you’re here…

… we have a small favour to ask. We don't want your money to support a hack's bar bill at Abattoir, but if you have a pound or two spare, we really encourage you to support a good cause. If this article has either helped you discover a gem or avoid a turkey, consider doing some good that will really make a difference.

You can donate to the charity of your choice, but if you're looking for inspiration, there are three charities we really like.

Mama Biashara
Kate Copstick’s charity, Mama Biashara, works with the poorest and most marginalised people in Kenya. They give grants to set up small, sustainable businesses that bring financial independence and security. That five quid you spend on a large glass of House White? They can save someone’s life with that. And the money for a pair of Air Jordans? Will take four women and their fifteen children away from a man who is raping them and into a new life with a moneymaking business for Mum and happiness for the kids.

Theatre MAD
The Make A Difference Trust fights HIV & AIDS one stage at a time. Their UK and International grant-making strategy is based on five criteria that raise awareness, educate, and provide care and support for the most vulnerable in society. A host of fundraising events, including Bucket Collections, Late Night Cabarets, West End Eurovision, West End Bares and A West End Christmas continue to raise funds for projects both in the UK and Sub-Saharan Africa.
