Switching to the other side of town Richard is sent to the Dragonfly, just up from Grassmarket, where it’s possible to enjoy food, drinks and cocktails. This month it also hosts Venue 414 for comedy. It’s all under the watchful eye of Jamie.

Background: Born in Whakatane, New Zealand. At the age of five his family moved to Moffat, Scotland, which is famous for its toffee. He left school at 17 and moved to Brighton where he fell in love with the bar scene. After a few years there he decided to move to Edinburgh where he began a circuit of bar work before ending up in the Dragonfly four months ago as the manager.

Ambition: To taste every whisky in the world!

Favourite Drink: Charlie Chaplin (sloe gin, apricot liquer and lime juice)
