Barstar Of The Day: 13 Aug. Caitlin Laird

Staying on Edinburgh’s southside Richard was sent around the corner to the Southern, a pub renowned for its wide selection of beers and burgers, including the chilli death. Here he met Caitlin with her tales from the outback.

Age: 25

Bar: Southern

Background: Born in Casino, in northern New South Wales, Australia - a town with a population of around 10 000 and no casino. At the age of three her family moved to Woodenbong, with a population of just over 300, that’s famous for Yowies - an Australian version of Bigfoot of which Cadbury’s used to make chocolate ones. She took up showjumping and at the age of 18 came first in the national inter-school equestrian championships. She went to university but didn’t enjoy it so started working in hospitality, the accommodation industry and on farms doing a range of jobs. She spent a year with Hertz and then came to the U.K. She loves being a manager and that’s the job she now has.

Ambition: To own a bar in Australia somewhere on the Gold Coast

Favourite Drink: Amaretto sour or cider in the absence of cocktails.
